In Torrevieja, we mainly work on flats in the old town built between the seventies and the nineties: long kitchens of four or five square metres, with a utility balcony at the back and tiling up to the ceiling. The usual refit makes use of that balcony, takes the wall units all the way up and swaps doors for drawers to gain the storage the floor plan does not give.
Very typical of elongated apartments with a pass-through kitchen. When well distributed, it is one of the most comfortable layouts for cooking, because you have everything within a turn of the waist.

How the two fronts are divided
The rule we follow: water and waste on one side, fire and oven on the other. This way, you don’t cross the hot pan over anyone, and the dishwasher stays next to the sink, which really saves steps.
Between the two fronts, there should be at least 1.20 m. If your kitchen is a passageway and opens to a gallery or terrace, it is also advisable that no oven door opens right in the way.
Not a corner to resolve
Its greatest advantage, and almost no one mentions it: since there are no corners, there are no corner cabinets, which are the most expensive and the least utilized. All the furniture is useful from the first shelf to the last.
